This type of functionality already exists, but I don't want to go through all the rigmarole of setting up rsync on Linux and Windows and reading the man page just so I can do one large file transfer. With switches, you can be explicit about what you do and don't want copied. It doesn't translate nicely to a GUI experience. Have you thought about using cp from the command line or Rsync?
